Layered Rhubarb Meringues

These Rhubarb Meringues take their inspiration from pavlovas--giant pillow-y puffy things topped with whipped cream and fresh fruit popular in Australia and New Zealand. Here a lightly sweetened rhubarb purée is layered with simple meringues and vanilla-scented whipped cream.
