I make no secret of my love for raspberries: tiny sweet-tart berries, so subtle and understated when compared to big shiny blackberries or strawberries. While plain raspberries are lovely, and a Raspberry Fool is divine, this Raspberry Parfait is so easy and flexible, as a summer dessert, that I can almost forget about it entirely, which is a grave mistake. Made with either whipped cream or plain yogurt, it is elegant and easy to make. You do need to prepare a Raspberry Sauce, which takes about five minutes and a few smashes with a fork, but then it's just all about the layering the berries, the sauce, and the creamy element in a pretty dish or glass.
