Got Tomatoes?

Roma Tomatoes (20 lbs)After reading Food in Jars: Preserving in Small Batches Year-Round by Marisa McClellen, I got inspired to, well, put food in jars. So I made an arrangement so that, on purpose, I would have two of these 20-pound boxes of tomatoes in my kitchen. I went to pick them up on my bike, which was a very short-sighted, slightly stupid thing to do. Luckily it was only a few blocks from my house and two nice girls offered to help me get them all home. Only when everything was on my counter, though, did I really realize that I had bought a grand total of 40 pounds of tomatoes. Yep. Forty pounds. I have no idea what I was thinking when I set that up, and I almost immediately started questioning my sanity.

Lots of Canned TomatoesWhat on earth did I do with all of them? Well, on the one hand it is a very long story, but on the other hand it's pretty simple: Whole Peeled Tomatoes, Chopped Tomatoes, Homemade Tomato Paste. That's how that box became these jars. Keep your tomato harvest yummy all year long by learning How to Preserve Tomatoes.

Your tomatoes look beautiful! I love that you tried to bike home with 40 pounds. Sounds like something I’d try to do. ;)

Thanks Marisa! In fairness to the picture of my sanity people may have from this, the plan was to load down the bike with the tomatoes and then walk the whole contraption home. Even that, I’m afraid, was a bit nuts!
