After reading Food in Jars: Preserving in Small Batches Year-Round by Marisa McClellen, I got inspired to, well, put food in jars. So I made an arrangement so that, on purpose, I would have two of these 20-pound boxes of tomatoes in my kitchen. I went to pick them up on my bike, which was a very short-sighted, slightly stupid thing to do. Luckily it was only a few blocks from my house and two nice girls offered to help me get them all home. Only when everything was on my counter, though, did I really realize that I had bought a grand total of 40 pounds of tomatoes. Yep. Forty pounds. I have no idea what I was thinking when I set that up, and I almost immediately started questioning my sanity.
What on earth did I do with all of them? Well, on the one hand it is a very long story, but on the other hand it's pretty simple: Whole Peeled Tomatoes, Chopped Tomatoes, Homemade Tomato Paste. That's how that box became these jars. Keep your tomato harvest yummy all year long by learning How to Preserve Tomatoes.
