Cold Soups for Hot Days

GazpachoOh my. It's been a tad warm, hasn't it? For hot days when eating anything other than a popsicle or, perhaps, some ice cream, just seems insane, try one of the Cold Soups for Hot Days. Most of them require no heat whatsoever to prepare, like the Spanish Gazpacho pictured here, and those that require a bit of actual cooking will benefit from being put together in the cool of the morning and allowed to mellow in the fridge all day.

For more ideas, I asked out Guide to Busy Cooks what she does: "I don't want to turn on the oven, boil a pot of water, or stand next to a grill when it's 90 degrees outside. I keep a good supply of frozen, refrigerated, and canned goods on hand so I can whip up these quick and easy cool no cook recipes at a moment's notice." Smart cookie.
