I recently attended a potluck dinner and had forgotten that it was going to be a potluck until... well, let's just say I didn't have time to go to the store. A bit of rooting around the fridge and cupboards and I came up with this Pearl Couscous Salad. It's chock full of green peas, mint, almonds, preserved lemon, and browned onion. It was crazy delicious. If that doesn't tempt, our Guide to Italian Food suggests Insalata di riso, or Rice Salad, instead. He says it's "one of those classic Italian summer dishes that varies greatly from cook to cook. This recipe is especially rich to give an idea of what can go into it. Feel free to tone it down or substitute other things to your taste."
