I'm back in Minnesota for my annual summer visit and I've finally righted a wrong and added a recipe for making my homestate's famous Juicy Lucys to Local Foods. What are Juicy Lucys, you may well ask? In short: inside-out cheeseburgers. The cheese is on the inside. The great benefit of these in this day and age of food safety concerns is that you can go ahead and cook these burgers to medium-well and even well-done and that cheese on the inside will still keep them at least somewhat, as the name would imply, juicy.
Use whatever cheese you like. I tend to make them with a good aged cheddar or even creamy blue cheese because that's how we roll at my house, but tradition demands the easily melt-able American cheese for these gems.
