Looking for a new way to enjoy the sweet crispiness of snap peas? I sliced some up and tossed them with a lemon-y, mint-y dressing to create this Snap Pea Mint Slaw, much to my (and others') delight. Since 99% of the snap peas that make it into our house (that is, those that aren't eaten on the way home from the market) are usually eaten as-is, standing at the kitchen counter, taking the time to prepare them and dress them up a bit opened our eyes to their possibility as an actual ingredient in dishes, not just an out-of-hand snack item.
