Skirt steak is an under-appreciated cut of beef in many circles. I love it for the grill and summer dinners and here's why: it has great flavor, it serves several people, once you slice it up it's as tender as anything, since you slice it up to serve it so portion sizes can vary by appetite, and it's easier to hit the mark of perfectly grilled beef with a larger cut than it is with smaller or individual steaks. I like to serve it with salsa fresca, guacamole, and either a baguette cut open and slathered with garlic butter or some corn tortillas I've warmed up on the grill, but you may prefer a more traditional corn and potatoes combination.
