This Late Summer Vegetables Stew is a great way to use up - to delicious effect - any summer produce starting to pile up from prolific gardens or overly enthusiastic trips to the farmers market. Peppers, zucchini, and tomatoes are quickly cooked with some onions, garlic, and white wine. It's an endlessly flexible recipe and you should feel free to add and subtract ingredients based on availability and taste buds. Great on its own, it is also delicious ladled over polenta. I haven't tried this combination myself, but I imagine it would be pretty darn good over Sweet Corn Polenta, which is a tasty way to work through any extra ears that have found their way into your kitchen.
