This How to Make Meringue I've whipped up (pun entirely and completely intended) is by special request of my friend Jess. How, she asked me, do you make meringue? Like so many things in this life, it is far, far better to show than to tell.
So whip up some egg whites, sweeten them, and slow bake them (or poach them) this weekend. A large raft of meringue topped with ripe summer fruit and freshly whipped cream is a thing of supreme glory.
