The delicate oniony-slash-garlicky perfume of shallots is, to my mind, perfect with chicken. In this Roasted Chicken and Shallots they are simply cooked together in a hot oven. You'll need time to roast the chicken, of course, but other than that, this dish is way easier than pie!
