This easy mix of potatoes, roasted green chiles, and sweet corn is simple yet sort of crazy delicious. I'm sure many people would serve it as a side dish to some meat (roasted pork would be a lovely match), but I offer it up as a main dish with a nice big crunchy salad alongside and have, so far, heard nary a complaint. Of course roasting fresh green chiles yourself and buying local sweet corn to cut off the cob will result in the tastiest possible dish, frozen versions of the same from earlier in the season will work just fine.
