Some people think they're small onions, others consider them large garlic, but shallots, while skirting the flavor edges of both, are their own thing.

Their soft flavor, small size, and controlled pungency make them perfect for using in salad dressings (this Shallot Vinaigrette is a favorite of mine). I also like to harness their sweet nature by roasting them (they are especially good when roasted alongside chicken). Learn more About Shallots here.
