
I was served this pumpkin risotto at a café in Paris. After the server set my husband's steak in front of him, he handed me this jar and said "et pour madame." I was surprised and a bit delighted and happily ate my lunch out of a jar while thinking that I could make it quite a bit more delicious. And so I came home and smile at the memory and cooked up this Winter Squash Risotto:

I will easily admit that the Parisian version is prettier, but I assure you that my version in remarkably more flavorful, with better texture, too.
