As a kid I found great comfort in the saying about March that if it comes in like a lion, it will go out like a lamb - growing up in Minneapolis, all I can say is that the weather often seemed quite lion-like on March 1 and I was well and ready for winter to be over. Now when the calendar turns to March my thoughts are more likely to turn to actual lamb than any proverbial gentle breezes. Take this Roasted Leg of Lamb with Root Vegetables. It was inspired by the flavors in Lamb Stew, but roasted up in a hot oven and served with pan juices. And no, I won't be cooking up any lion.
