Apple Season
Apples are deeply associated with fall in the American imagination, as well they should be. Many apple varieties in many parts of the country, however, come into season in August (even late July some places). Apples are harvested into November in some areas, but in general apples are at their best in September and October. They keep well, though, so locally grown apples can often be found well into winter.

Cooking With Apples
Once cut, apples will turn brown fairly quickly. You can mitigate this by putting the slices in acidulated water (about 2 Tbsp. lemon juice or vinegar per quart of water).
