Thin slices of asparagus with browned garlic and Chinese fermented or salted black beans make a quick and easy dish. Although not an exact substitute, black bean sauce or garlic and black bean sauce may be used in place of salted black beans.
This dish is great over rice and in combination with a meaty dish or simply alongside roast chicken.

Ingredients:
- 1 bunch asparagus
- 1 Tbsp. grapeseed, vegetable, or canola oil
- 3 cloves garlic, thinly sliced
- 1 Tbsp. Chinese fermented or salted black beans
- 2 Tbsp. rice wine or sake
Preparation:
- Trim asparagus and cut on the diagonal into very thin slices. Set aside.
- In a large frying pan or wok over high heat, add oil. When hot add garlic and black beans. Add asparagus and cook, stirring, until garlic browns, about 1 minute. Add rice wine and cook, stirring, until evaporated, about 2 minutes.
- Serve immediately.
Makes 2 to 4 servings.
