Cauliflower is a personal favorite of mine. As someone who eats, I love its nutty flavor; as someone who cooks, I love how flexible it is. I've gathered here readers' favorite cauliflower recipes for all to enjoy.

1. Cauliflower Soup

2. Steamed Cauliflower

Steaming cauliflower is super easy. I usually just do it in a pan with very little water, but microwaves and steamer baskets are fine solutions, too. See them all at How to Steam Cauliflower.

Most people serve steamed cauliflower with butter and salt and pepper, or perhaps a cheese sauce. These are delicious options. So, too, however, is Cauliflower With Pesto and Cauliflower With Mint.

3. Spicy Roasted Cauliflower

A bit of melted butter and a few spices plus the heat of a hot oven, and you can turn cauliflower into a snack or appetizer worthy of the most jaded of palates. Did I say snack? I did. 4. Baked Cauliflower Pakora

These baked fritter have lots of flavor from the well-spiced chickpea flour batter. I serve them with a simple mint-cilantro sauce for even more flavor, but some might say that's gilding the lily. 5. Cauliflower Fritters

These eggy cauliflower fritters are made with cauliflower, egg, flour, and salt. That's it. And they are remarkably tasty. Simple, but tasty. 6. Cauliflower Gratin

A gratin is any dish with bread crumbs, nuts, and/or cheese on top that is then baked so that topping becomes crispy. The combination of Parmesan and bread crumbs used here give plenty of flavor and crunch to the cauliflower underneath. The wee bit of garlic makes things pretty tasty, too. 7. Cauliflower Pasta

Olives, capers, garlic, and red chile flakes work together to turn humble cauliflower into a spectacular sauce (more of a coating, really, than a sauce) for pasta. Be sure to cook the cauliflower until it is very tender; this is not a dish for crisp-tender vegetables; the "sauce" is created, partly, by the cauliflower starting to break down a bit from being cooked.
