Tomatillos, onions, garlic, and chiles are grilled and pureed to make this kicky, delicious, super-easy salsa.

Ingredients:
- 12 tomatillos
- 1 large onion, peeled and quartered
- 1 or 2 small green chiles (like jalapenos), halved
- 3 or 4 cloves garlic, peeled
- Olive, vegetable, or canola oil
- Salt
- Cilantro (optional)
Preparation:
- Heat grill. Thread tomatillos, onion, chiles, and garlic on 2 or 3 skewers. Brush vegetables with oil.
- Place skewers on grill and cook, turning once, until vegetables are blistering and tomatillos are soft, about 10 minutes total.
- Put vegetables in a blender or food processor and whirl until smooth. Add salt to taste. Serve warm or at room temperature.
