Grilled Tomatillo Salsa

Grilled Tomatillo Salsa

Tomatillos, onions, garlic, and chiles are grilled and pureed to make this kicky, delicious, super-easy salsa.

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Ingredients:

  • 12 tomatillos
  • 1 large onion, peeled and quartered
  • 1 or 2 small green chiles (like jalapenos), halved
  • 3 or 4 cloves garlic, peeled
  • Olive, vegetable, or canola oil
  • Salt
  • Cilantro (optional)

Preparation:

  1. Heat grill. Thread tomatillos, onion, chiles, and garlic on 2 or 3 skewers. Brush vegetables with oil.
  2. Place skewers on grill and cook, turning once, until vegetables are blistering and tomatillos are soft, about 10 minutes total.
  3. Put vegetables in a blender or food processor and whirl until smooth. Add salt to taste. Serve warm or at room temperature.

Makes about 1 1/2 cups Grilled Tomatillo Salsa
