Jar of Preserved Lemons

Pour salty juice from the bowl over lemons. Add more lemon juice to cover, if necessary. Seal and set in the kitchen counter for 30 days, shaking and turning when it occurs to you. The lemons are then ready to use. Officially, you can store them in the fridge for 6 months. I've had some in my fridge for up to 2 years and noticed no change in quality--they just keep slowly sucking up the lemon juice that covers them, becoming more unctuous with time.
