These parfaits are perfect for when you want to go one step past simple berries with whipped cream. Taking the time to make a quick Raspberry Sauce and layer the sauce, fresh berries, and whipped cream or, for a lighter treat, plain yogurt, transforms the everyday into something special.
For each serving, spread a 1 to 2 Tbsp. of raspberry sauce in the bottom of a glass dish, cup, or wineglass. Spoon in 3 to 4 Tbsp. lightly sweetened whipped cream (see How to Whip Cream for tips) or lightly sweetened plain yogurt (thick Greek-style yogurt works best). Drizzle another 1 to 2 Tbsp. raspberry sauce on the cream. Gently place fresh raspberries in with the sauce. Top that with another 3 to 4 Tbsp. whipped cream or yogurt. Add another layer of raspberry sauce and fresh berries and serve as immediately as you can (if you let it sit around, the raspberry sauce will bleed significantly into the cream and look not-so-nice anymore).
