Sweet Short Crust

This dough is quick, easy, and results in a cookie-crumb-like crust that is perfect for seasonal fruit tarts.

Prep Time: 15 minutes

Cook Time: 25 minutes

Ingredients:

  • 2 cups flour
  • 2/3 cup sugar
  • 1/2 tsp.salt
  • 1 tsp. vanilla extract
  • 8 Tbsp. butter
  • 4 Tbsp. cream

Preparation:

  1. Preheat oven to 350.
  2. In a large bowl, combine flour, sugar, and salt. With clean fingertips, rub the butter into the flour till fine-grained. Drizzle on the cream and stir till evenly moistened. (Alternatively, put flour, sugar, and salt in a food processor. Pulse to combine. Add butter. Pulse until mixture looks like sand. With motor running, drizzle in cream. Whirl until dough pulls together.)
  3. Pack the dough into a 9-inch tart pan or pie dish and press it into place, making sure the edges are extra-thick. Prick all over with a fork. To fully cook, bake until golden brown, about 25 minutes. To partially cook, bake until golden, about 12 minutes.

Makes 1 9-inch crust.
