This is how my mom makes guacamole: add salsa to mashed avocados, season, and serve. It's remarkably easy and insanely delicious. It is also, of course, endlessly flexible. It also doubles, triples, quadruples... however much you want to make, really, with ease.
Too easy for your taste? I've been known to make my own Salsa Fresca and go from there.
Yield: About 2 cups
Ingredients:
- 2 ripe avocados
- 1/4 - 1/2 cup your favorite prepared salsa
- Sea salt, freshly ground black pepper, and fresh lemon or lime juice to taste
Preparation:
Cut the avocados in half lengthwise and twist lightly to separate the halves. Take out the pits (I find chopping into them with a sharp knife grabs the pit and lets me just pull it right out), and then use a spoon or fork to scoop out the avocado flesh into a medium bowl.
Add salsa and use a fork to mash the avocado and the salsa together. Add salt, pepper, and lemon or lime juice to taste. Stir to combine. Taste and add more salt, pepper, and/or lime or lemon juice to suit your taste.
