is vodka infused with cucumbers and makes for cool and easy summer cocktails. Serve it over ice, with soda, or in a Cucumber Martini
. Best of all, making Cucumber Vodka is beyond easy. To make it simply:
- Peel, seed, and roughly chop 1 large garden or English (hothouse) cucumber.
- Put the chopped cucumber in a large glass container with a tight-fitting lid.
- Pour 1 bottle (750-ml) of vodka over the cucumber. Seal and let sit for at least three days and up to two weeks (any longer and the vodka will take on the slight bitter taste of even peeled cucumber).
- Strain the vodka back into its original bottle or another clean bottle (I suggest clearly labeling the bottle to avoid cocktail-time confusion). Discard or eat the "pickled" cucumber.
