Lemon Drop Champagne Cocktails are just a bit sweet and lemony – and a great way to dress up less-than-stellar sparkling wine.

Yield: 1 cocktail
- 1 Tbsp. lemon syrup*
- 4 - 6 oz. champagne or sparkling wine
- Lemon twist (strip of zest)
- * You can make lemon syrup by bringing 1/2 cup fresh lemon juice and 1/2 cup sugar. Reduce heat to maintain a simmer and cook until thickened slightly, about 10 minutes. Add the grated zest of 1 lemon, remove from heat, and let sit until cooled to room temperature. Strain and use or keep covered and chilled for several weeks.
Pour lemon syrup into a champagne flute or wine glass. Add champagne and twist of lemon.
