This easy Horseradish Cream adds a swift kick to smooth, mild, sweet soups.

Ingredients:
- 1/2 cup sour cream or creme fraiche
- 1 to 2 Tbsp. freshly grated horseradish or jarred horseradish (not the creamy variety)
- Salt and freshly ground black pepper
Preparation:
In a small bowl mix sour cream and horseradish. Add salt and pepper to taste. Use to garnish soups, top savory panckes, or serve alongside roasted beef or grilled steaks.
Keep, covered and chilled, up to 2 days.
Makes 1/2 cup Horseradish Cream.
