Garlic

Garlic has a season? Yes it does. Although it is available all the time, garlic is harvested and at its most flavorful, sweetest best in late summer and fall. And yes, garlic is a vegetable. A lovely, fragrant, aromatic vegetable. Along with onions, leeks, and shallots, it's a member of the lily family commonly used for seasoning other dishes (you can find it used liberally in many of the dishes on localfoods.about.com), but it can also be delicious when put front-and-center as it is in these recipes.

Aioli (Garlic Mayonnaise)
Use Aioli as a dip for grilled or steamed vegetables, dollop it on simply cooked fish, or eat it by the spoonful (not a great idea, but it is delicious!).

Roasted Garlic
Roasted garlic is easy to make and has many uses - as a spread, appetizer, addition to roasts, savory base of salad dressings, and garnish for soups.
