Ingredients:
- 1 cup pitted green olives
- 2 cloves garlic
- 1 Tbsp. lemon juice
- 1 Tbsp. olive oil, plus more brushing lemons
- 1/2 tsp. salt
- 1 1/2 pounds boneless skinless chicken thighs
Preparation:
- Prepare the grill for direct medium heat.
- Whirl olives, garlic, lemon juice, olive oil, and salt in a blender or food processor. Spread the mixture evenly over the chicken thighs.
- Place chicken thighs smooth-side-down on the grill. Cover and cook until grill marks form, about 10 minutes. Turn chicken over and cook until chicken is cooked through, about 10 more minutes.
Serve chicken hot or at room temperature.
