This Sweet Potato Broccoli Curry is easy to make in a snap – and you can adjust the spicy level to suit your tastes.

Ingredients:
- 2 sweet potatoes
- 1 head or about 1 lb. of broccoli
- 2 cloves garlic
- 1 - 3 fresh hot chiles
- 4 green onions
- 1-inch piece of fresh ginger
- 2 Tbsp. vegetable or canola oil
- 1/2 tsp. salt
- 2 cans (15 oz. each) coconut milk
- Cilantro for garnish (optional)
Preparation:
- Peel sweet potato and cut into bite-size pieces. Trim broccoli and cut into bite-size florets; peel broccoli stem and cut into thin rounds.
- Mince garlic, finely chop chiles, slices green onions, and grate ginger.
- In a medium pot over high heat, heat the oil. Add garlic, chiles, onions, ginger, and salt. Cook, stirring, until sizzling and fragrant. Add sweet potatoes and coconut milk and bring to a boil. Reduce heat to a simmer and cook 10 minutes.
- Add broccoli and cook until vegetables are tender, about 10 more minutes.
- Serve hot, over cooked rice and garnished with cilantro, if you like.
