Sweet Potato Broccoli Curry

This Sweet Potato Broccoli Curry is easy to make in a snap – and you can adjust the spicy level to suit your tastes.

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: Makes 4 Servings

Ingredients:

  • 2 sweet potatoes
  • 1 head or about 1 lb. of broccoli
  • 2 cloves garlic
  • 1 - 3 fresh hot chiles
  • 4 green onions
  • 1-inch piece of fresh ginger
  • 2 Tbsp. vegetable or canola oil
  • 1/2 tsp. salt
  • 2 cans (15 oz. each) coconut milk
  • Cilantro for garnish (optional)

Preparation:

  1. Peel sweet potato and cut into bite-size pieces. Trim broccoli and cut into bite-size florets; peel broccoli stem and cut into thin rounds.
  2. Mince garlic, finely chop chiles, slices green onions, and grate ginger.
  3. In a medium pot over high heat, heat the oil. Add garlic, chiles, onions, ginger, and salt. Cook, stirring, until sizzling and fragrant. Add sweet potatoes and coconut milk and bring to a boil. Reduce heat to a simmer and cook 10 minutes.
  4. Add broccoli and cook until vegetables are tender, about 10 more minutes.
  5. Serve hot, over cooked rice and garnished with cilantro, if you like.
