Forget tasteless turkey burgers. The blue cheese and black pepper in these burgers give them plenty of flavor - and the cheese helps keep them moist. Serve on buns, with the condiments and toppings of your choice.

Yield: 4 Turkey Gorgonzola Burgers
Ingredients:
- 1 lb. ground turkey
- 2 shallots, minced
- 1/2 tsp. salt
- 1/4 - 1/2 tsp. freshly ground black pepper
- 1/2 cup gorgonzola or other blue cheese, crumbled or pulled into small pieces
Preparation:
- Heat a grill to medium high heat.
- In a large bowl, combine turkey, shallots, salt, pepper, and gorgonzola. Use your hands to break apart the meat gently and combine all the ingredients.
- Divide mixture into 4 equal parts and shape each one into a 3/4-inch-thick patty with a dent in the middle (as the meat cooks it will contract, the dent will keep it a patty-shape).
- Place patties on the hot grill. Cook, flipping over once, until browned and cooked through, about 4 minutes each side.
