This Turkey Green Chili may not win any beauty contests, but it sure does hit the spot flavor-wise. Ground turkey, green chiles, hominy, and white beans make a hearty and satisfying soup/stew. And the bonus prize? You can make everything from scratch or used canned versions and throw the whole thing together in about half an hour.
You'll find it becomes much more attractive if you add some of the optional garnishes listed below. Really much more attractive.
Note: You can use shredded cooked turkey meat in place of the ground turkey, just skip step 1. It's a great way to use leftover turkey!

Ingredients:
- 1 lb. ground turkey
- 2 Tbsp. vegetable oil
- 1 onion, finely chopped
- 1 tsp. salt
- 4 cloves garlic, minced
- 1 cup beer (optional)
- 12 mild green chiles (poblanos are great), roasted, peeled, and chopped or a 16-oz. jar of roasted green chiles or 2 cans (7-oz. each) diced roasted green chiles
- 6 cups chicken or turkey broth
- 1 1/2 cups dried hominy cooked in salted water until tender (about 2 hours) and drained or a 28-oz. can of hominy, drained
- 1 1/2 cup white beans, soaked and cooked until tender (about 1 hour) or 2 14-oz. cans of white beans, drained
- Optional Garnishes: chopped cilantro, chopped green onions, sliced avocado, crumbled cotija cheese
Preparation:
- In a large pot over medium high heat, cook the turkey until cooked through. Remove from pot.
- Add oil to pot and add onion and salt. Cook, stirring, until onion is soft, about 2 minutes. Add garlic and stir until fragrant, about a minute. Add beer, if using, and bring to a boil.
- Add chiles to the pot and stir to combine. Return turkey to the pot and add broth. Bring to a boil. Add hominy and beans and bring to a simmer. Maintain a steady simmer and let cook until flavors blend, at least 15 minutes. Serve hot and let diners add their own garnishes to taste.
