These Ginger Shrimp are marinated in a quick puree of onion and ginger before being grilled or broiled - tons of flavor, super easy. Great for a weeknight dinner of a fun dinner party. They even work as appetizers. The peels help keep the shrimp moist and flavorful while you cook them. Note: They are a bit messy to eat, since they need to be peeled.

Ingredients:
- 2 lbs. shrimp, shells on
- 1 onion
- 1 2-inch piece fresh ginger, peeled and chopped
- 1 clove garlic, chopped
- 1/2 tsp. salt
Preparation:
- Rinse shrimp and pat dry. Put shrimp in a large bowl or re-sealable plastic bag.
- In a blender, whirl onion, ginger, garlic, and salt. Add up to 3 Tbsp. of water to make a smooth paste if you need to. Pour mixture over shrimp and toss to coat thoroughly. Cover bowl or seal bag and set aside for 15 to 30 minutes.
- Meanwhile, heat grill or broiler to high.
- Thread shrimp on skewers or arrange on a rimmed baking pan. Grill or broil until opaque and cooked through, about 3 minutes per side. Serve hot or warm.
