These Ginger Shrimp are marinated in a quick puree of onion and ginger before being grilled or broiled - tons of flavor, super easy. Great for a weeknight dinner of a fun dinner party. They even work as appetizers. The peels help keep the shrimp moist and flavorful while you cook them. Note: They are a bit messy to eat, since they need to be peeled.

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients:

  • 2 lbs. shrimp, shells on
  • 1 onion
  • 1 2-inch piece fresh ginger, peeled and chopped
  • 1 clove garlic, chopped
  • 1/2 tsp. salt

Preparation:

  1. Rinse shrimp and pat dry. Put shrimp in a large bowl or re-sealable plastic bag.
  2. In a blender, whirl onion, ginger, garlic, and salt. Add up to 3 Tbsp. of water to make a smooth paste if you need to. Pour mixture over shrimp and toss to coat thoroughly. Cover bowl or seal bag and set aside for 15 to 30 minutes.
  3. Meanwhile, heat grill or broiler to high.
  4. Thread shrimp on skewers or arrange on a rimmed baking pan. Grill or broil until opaque and cooked through, about 3 minutes per side. Serve hot or warm.

Makes about 4 servings Ginger Shrimp.
