Ingredients:
- 3 to 4 cups peeled and cubed watermelon (seeds removed as much as possible)
- 1/2 cup crumbled feta cheese
- 1/3 cup diced red onion (optional)
- 1/3 cup finely chopped mint, basil, or flat-leaf parsley (optional)
Preparation:
Arrange watermelon cubes on 4 to 6 salad plates. Sprinkle with feta cheese, red onion, and herbs. Serve immediately.
