The combination may not be an obvious one, but smooth yet crunchy sweet melons and crumbly, salty feta work extremely well together. The red onion/shallot is optional, but the bit of bite it provides adds great balance to the salad. See how to peel melons.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: Makes 4 to 6 servings

Ingredients:

  • 3 to 4 cups peeled and cubed watermelon (remove as many seeds as possible)
  • 1/2 cup crumbled feta cheese
  • 1/3 cup diced red onion or shallot (optional)
  • 1/3 cup finely chopped mint, basil, or flat-leaf parsley (optional)

Preparation:

Arrange the watermelon cubes on 4 to 6 salad plates. Sprinkle with the feta cheese, red onion, and herbs. Serve immediately.

Makes 4 to 6 Watermelon & Feta Salads.

Thanks for this recipe. I love watermelon, and love to add it to mocktails and dishes too. I am constantly on the look-out for recipes that integrate watermelon intelligently in dishes. Recently I happened to stumble upon water melon feta salad at a small restaurant called Graffiti in the East Village in NYC. I just loved the interplay of flavors the different ingredients brought to the salad at Graffiti. Though I must say that the ingredients used by Graffiti and the ingredients mentioned by you were totally different. At Graffiti, the watermelon and mint sorbet gave it a cooling sensation. I would recommend you to try it.
