Yield: Makes 4 to 6 servings
- 3 to 4 cups peeled and cubed watermelon (remove as many seeds as possible)
- 1/2 cup crumbled feta cheese
- 1/3 cup diced red onion or shallot (optional)
- 1/3 cup finely chopped mint, basil, or flat-leaf parsley (optional)
Arrange the watermelon cubes on 4 to 6 salad plates. Sprinkle with the feta cheese, red onion, and herbs. Serve immediately.
