Onions

Onions are at their sweetest when first harvested in summer. When dried and stored, as most onions at grocery stores are, they become less sweet and, as time goes by, increasingly sharp flavored. Gentle, long cooking mitigates this sharpness, warming the kitchen in the process on chilly fall and winter days.

Note that early spring onions are a completely different creature, at least culinarily speaking.
