This easy graham cracker crust has a kick of candied ginger in it - perfect with summer fruits.12 whole graham crackers

Yield: 1 9-inch pie crust or similar
Ingredients:
- 1 – 2 Tbsp. crystallized or candied ginger
- 1 Tbsp. sugar
- 1/4 tsp. salt
- 3 Tbsp. melted butter
- 1 egg white
Preparation:
- Preheat oven to 350. Pulse graham crackers in a food processor (or use a rolling pin to crush them while they are sealed in a sealable plastic bag). Add ginger, sugar, and salt and pulse to combine.
- With the processor running, add the melted butter and then the egg white. The mixture should quickly form into a mass much like wet sand. (You can do this by simply stirring by hand instead of using a food processor, if you like.)
- Press mixture into a pie pie, tart pan, or free-form on a baking sheet.
- Bake until set, about 15 minutes. Fill or top warm or let crust cool first, according to the recipe.
