Pie Crust Dough Patted Into a Disk

Turn pie crust dough out onto a piece of plastic wrap and gently pat into a disk. Forming the dough into the basic shape you will eventually roll it out into will make the rolling out that much easier. Wrap the dough and chill it for at least 30 minutes. Most doughs will keep for up to three days chilled or, double wrapped and sealed in a plastic bag, frozen for up to six months.
