How (and Why) to Peel Asparagus

Use More of the Stalk & Make It Look Pretty Too

Most recipes have you break off the tough or woody ends of asparagus spears. It's a quick, easy way to trim asparagus. With a tiny bit more effort, however, you can eat most of the stalk and have much more elegant looking asparagus. Simply cut off and discard any dried ends of spears, lay a spear on a flat surface and hold the tip. Using a vegetable peeler, peel off skin from bottom half of each spear.
