Roasting green garlic brings out it lovely springtime sweetness. More of it is edible than with mature roasted garlic, but you may need to chew around any papery peel that has developed. Roasted green garlic is particularly tasty with fresh goat cheese and chopped fresh spring herbs like dill or chervil.

Yield: 1 to 2 bulbs per person
Ingredients:
- Green garlic bulbs (1 - 2 per person)
- Olive oil for drizzling
- Salt for sprinkling
Preparation:
- Heat oven to 375°F. Trim green garlic, removing the roots and dark green stalk. Lay trimmed green garlic in a baking pan or on aluminum foil. Drizzle with olive oil and sprinkle with salt.
- Cover with foil and roast 30 minutes. Remove foil and continue roasting green garlic until it's tender and browned, about 15 minutes.
