Mash 1/2 to 1 avocado into a recipe of Classic French Vinaigrette (3 Tbsp. olive oil, 1 Tbsp. red or white wine vinegar, 1 tsp. dijon-style mustard, salt and pepper to taste – add some minced shallot if you like) or your favorite flavorful but simple vinaigrette (I also like to use this Lemon Garlic Vinaigrette as a base).
