Mint and jalapeno work together to create a delicious dressing that also works as a marinade for lightly steamed vegetables. Try it on romaine leaves or drizzled on tender spring ot summer vegetables.

Ingredients:
- 2 cloves garlic, chopped
- 1 jalapeno chile, seeded and chopped
- 3 Tbsp. olive oil
- 2 Tbsp. lemon juice
- 1/3 cup fresh mint leaves
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
Preparation:
Whirl ingredients in blender until smooth. Serve immediately or keep, covered and chilled, up to one week.
Note: Vinaigrette will become spicier as it sits.
Makes about 1/4 cup Mint Jalapeno Vinaigrette.
