Fresh basil and a bit of garlic are whirled into this simple fresh basil vinaigrette. It's perfect on tomatoes, summer salad greens, or grilled meats.

Ingredients:
- 2 cups basil leaves (about 1 large bunch)
- 1/2 cup good-quality olive oil
- 1/4 cup white wine or champagne vinegar
- 1 small clove garlic
- Salt and pepper to taste
Preparation:
In a blender or food processor, whirl basil, oil, vinegar, and garlic until smooth. Add salt and pepper to taste.
Makes about 1 cup Fresh Basil Vinaigrette.
