Ginger Vinaigrette

This quick and easy Ginger Vinaigrette is endlessly flexible - play with the proportions and add flavors as you see fit. It is perfect on Asian green mixes many markets sells, on mizuna, or on tossed with thinly sliced cabbage for an Asian-style coleslaw.

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

  • 1/4 cup unseasoned rice vinegar
  • 1 Tbsp. sugar, plus more to taste
  • 1 Tbsp. freshly grated ginger
  • 1/4 cup vegetable oil or un-toasted sesame oil
  • Salt or soy sauce to taste

Preparation:

  • In a small bowl,combine vinegar with sugar and ginger. Let sit a few minutes for the vinegar to extract the ginger flavor.
  • Whisk in vegetable oil. Add salt or soy sauce and additional sugar to taste, if you like.

Makes 1/2 cup Ginger Vinaigrette.
