A bit of garlic and lemon juice, along with plenty of fresh mint, turns yogurt into a delicious, healthful salad dressing.

Ingredients:
- 1/2 cup yogurt
- 1 to 2 tsp. lemon juice
- 1 clove garlic, minced
- 1/4 cup mint leaves, finely chopped
- Salt and freshly ground black pepper
Preparation:
Combine all ingredients in a small bowl. Add additional lemon juice to thin, if you like. Serve with fresh greens or as a dip.
Makes about 1/2 cup Yogurt & Mint Dressing.
