Ingredients:
- 2 grapefruits (red grapefruits make for a particularly pretty salad)
- 3 oranges
- 2 tsp. freshly squeezed lemon juice (optional)
- 1 small pomegranate
- 4 fresh mint leaves (optional)
Preparation:
Peel and section the grapefruits and oranges (for directions on getting pith-free citrus sections, see How to Section Citrus Fruit). Combine sections and any juice in a medium bowl. Sprinkle with lemon juice, if you like and the grapefruit and oranges are particularly sweet.
Remove the seeds from the pomegranate and sprinkle them on the salad (see How to Seed a Pomegranate for tips). You may not want to sue all of the seeds, you can save any extra, covered and chilled, for up to a week. Top the salad with thin ribbons of mint, if you like. Serve immediately.
