Toss shredded, blanched celery root with a mustardy dressing to make a mild, versatile fall and winter salad. This classic French salad is delicious on its own, served on lettuce leaves, as part of a composed salad, or as a sort of relish accompaniment with roast meats.

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients:

  • 1 celery root (celeriac)
  • Salt
  • 3 Tbsp. mayonnaise
  • 1 Tbsp. coarse-grain or country style mustard
  • 2 tsp. lemon juice
  • Freshly ground black pepper

Preparation:

  1. Bring a pot of water to a boil.
  2. Meanwhile, peel celery root and shred it on a large-hole grater.
  3. When water is boiling add salt and shredded celery root. Cook until celery root is tender, about 2 minutes. Drain, rinse with cold water, and pat thoroughly dry.
  4. In a medium bowl, combine mayonnaise, mustard, and lemon juice. Add salt and pepper to taste. Stir in celery root to coat thoroughly. Serve immediately or store, chilled, for up to two days.

Makes 4 to 6 servings Celery Root Salad.

Celery roots can be consumed raw as well. For a tasty and very healthy recipe keep reading. After shredding celery roots, mix it with plain nonfat yogurt, minced garlic and crushed walnuts with a pinch of salt. Celery roots already have savory taste, so you won't be needing too much salt. The proportions are really up to you, but make sure that yogurt you use is enough to cover the salad and and keep it wet. You can serve it in a large serving dish or make it more fun and take a clue from the picture next. I hope you try it.
