This Plum Mint Salsa takes about 10 minutes to throw together, and is amazingly delicious. Plop it on grilled chicken, fish, or pork for an easy and beautiful dinner.

Yield: About 2 cups Plum Mint Salsa
- 4 ripe plums
- 1 – 2 jalapeño chiles
- Leaves from 8 mint sprigs
- 1/4 tsp. salt
Halve, pit, peel, and chop the plums and put them in a medium bowl. Stem, seed, and finely chop the jalapeño(s). Add to the plums. Finely chop mint leaves and add to plums. Sprinkle plums with the salt. Gently toss the plum mixture to combine everything.
