Pinquito Beans

Santa Maria Pinquito Beans

These Piquinto Beans are traditionally served as part of Santa Maria Barbecue: Grilled Tri-Tip Steak, Piquinto Beans, Salsa Fresca, Tossed Green Salad, and garlic bread.

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

Yield: About 8 servings


  • 1 lb. pinquito beans (or other small beans)
  • 1 tsp. kosher salt, plus more to taste
  • 2 tomatoes, peeled and chopped or 3/4 cup pureed tomato
  • 2 to 4 cloves garlic, minced
  • 1 Tbsp. brown sugar
  • 1 - 3 tsp. chili sauce
  • 1 tsp. dry mustard


  1. Put the beans in a very large bowl, cover with cool water, and let soak overnight or use the Quick Soak Method.
  2. Drain the beans and put them in a large pot. Cover the beans by at least 2 inches of water and bring to a boil. Add the salt, reduce heat to maintain a steady simmer, and cook until the beans are tender to the bite but not mushy. Time will vary from 20 minutes to over an hour depending on the variety of bean and how old they are, among other factors.
  3. Remove from the heat and reserve 1 cup of the bean cooking liquid. Drain the beans and return them to the pot with the reserved liquid. Add the tomatoes, garlic, brown sugar, chili sauce, dry mustard, and salt to taste. Bring to a boil, reduce heat to simmer, and cook until the flavors blend, about 10 minutes. Serve hot or warm.

Makes about 8 cups Piquinto Beans, about 8 servings or enough to accompany 2 Grilled Tri-Tips.

Close to that found in the Central Coast, Member CalifBeachBum

This recipe is close to that which I've learned to love from the Santa Maria area. I added 1 1/2 lbs of quality hamburger and a chopped onion with 2 teaspoons of cumin, changing it to more resemble the That changed it to more resemble the Santa Maria BBQ beans that I am used to.
