These Winter Soups will warm you down to your toes when the air turns frigid. Plus, they use ingredients that are seasonal in winter - bonus!

1. Beet and Cabbage Borscht

Technically, borscht is any stew-type soup. The best-known kind in the U.S., however, is made with beets and is brilliantly red. This beet and cabbage borscht is packed with roasted red beets, onions, cabbage, and white beans--all the better to make it through a cold winter night.

This Cider Onion Soup is a twist on traditional French Onion Soup. It uses hard apple cider instead of white wine, whole grain bread instead of baguette, and a bloomy-rind cheese instead of gruyere. It is sweet and luscious and perfect for any winter table.

This version of Minestrone uses pureed white beans in the broth and flavorful cranberry beans and chopped kale in the soup – it makes for a filling and delicious soup perfect for winter.

7. Lentil Soup

This basic, just ever-so-gently spiced Lentil Soup hits the spot on cold winter days and is topped with an optional parsley-garlic-lemon swirl. For something a bit different, try this Red Lentil Soup seasoned with cumin and smoked paprika.

Mushrooms, soba noodles, shredded cabbage, and a bit of arugula or spinach come together in a savory broth to create a deeply warming and delicious one-pot dinner.

Red lentils are hulled and split, which helps them cook fast. In this soup they are cooked with vegetables and seasoned with cumin and smoked paprika to highlight their earthy flavor. Use your favorite fruity olive oil to garnish this soup as a nice contrast to the smoky flavor and hearty texture.

10. Sweet Potato Carrot Soup

Lots of orange, lots of flavor, lots of vitamins. This Sweet Potato Carrot Soup is easy, delicious, nutritious, and able to cheer up the dreariest winter day. An addition of a small amount of cream at the end will soften and enrich the soup, but is fully optional - the soup is just as smooth and tempting without it. The recipe includes lots of ideas for garnishes to jazz it up.
