Quickly bake this asparagus gratin with a topping of parmesan cheese (and a squirt of lemon) for an easy, fun way to serve spring's favorite vegetable. For a pretty presentation, be sure to peel the stalks, rather than breaking them.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

  • 1 lb. asparagus
  • 1/4 tsp. salt
  • 3/4 cup freshly shredded parmesan cheese
  • Lemon juice
  • Freshly ground black pepper

Preparation:

  1. Preheat oven to 450°. Trim and discard tough asparagus ends (hold spear at either end, bend until it breaks, and discard lower part) or cut off ends and peel lower half of the stalk. Arrange asparagus in a 2-qt. shallow baking dish.
  2. Evenly sprinkle asparagus with salt and cheese. Bake in upper half of oven until asparagus is tender and cheese is melted and browned, 5 to 10 minutes.
  3. Sprinkle with lemon juice and pepper to taste. Serve hot or warm.

Makes 4 to 6 servings Asparagus Gratin.
