Toss thinly sliced radishes with freshly grated ginger and rice wine vinegar for the easiest - and most refreshing - of spring salads.

Ingredients:
- 2 bunches radishes
- 2 Tbsp. rice wine vinegar
- 1/2 tsp. freshly grated ginger
- Salt
- Cilantro or sorrel, coarsely chopped (optional)
Preparation:
Wash and trim radishes. With a very sharp knife or small mandoline, slice radishes as thinly as you can. In a medium bowl, toss radishes with vinegar and ginger. Season to taste with salt. Garnish with cilantro or sorrel, if you like. Serve immediately.
Makes 4 servings Gingery Radish Salad.
